OLD TIMEY CHOCOLATE LAYER CAKE


This is one of my very favorite cake recipes. It has been handed down through the years from my Mom's side of the family. I remember as a little girl my mom making this cake for me and also her chocolate cake with chocolate fudge icing(yummy)! I hope you enjoy it as much as I have.


Old Timey Chocolate Layer Cake:

2 sticks butter, room temp
2 1/2 cups sugar
1/3 cup shortening
5 eggs, room temp
2 tsp vanilla
5 cups all-purpose flour
1 tsp salt
2 tsp baking soda
5 tsp baking powder
2 cups whole milk

Preheat oven to 350. Grease and flour cake pans. I cook my cakes individually and I usually end up getting 16 (9") layers. I use 8 pans let the pans cool, then wipe them out and grease and flour them again. Cream butter, shortening, and sugar until fluffy. Add eggs one at a time and blend until incorporated. Add vanilla. For flour mixture, add salt, baking soda, and baking powder to the flour and whisk together to blend all together. With mixer on low, gradually add 1/4 of flour mixture then 1/4 of milk. Continue alternating flour and milk until all of it is added. Mix on medium speed until the flour and milk is fully incorporated (about 3 minutes.) Pour about 3/4 cup of batter into each pan and spread around in pan. Bake for 8-10 minutes. Remove from oven and let cool.

Cooked Chocolate Fudge Icing:

4 cups granulated sugar
1/3 cup cocoa powder
1 stick butter
1 can evaporated milk (15 oz)
1 tsp vanilla

In a heavy saucepan place sugar and cocoa and blend well. Add butter, milk, and vanilla. Cook on medium low heat until mixure starts to thicken some. (About 12 minutes. This icing is a pourable icing and will not thicken up like a frosting)

Once icing is done, you are ready to start stacking. Place one layer on cake round and pour about 3-4 Tbls of icing on cake and spread. Repeat process until all cakes have been iced. Let cake sit overnight to allow icing to set.

I usually double the icing recipe to make sure I have enough. Whatever is left over is an added benefit because I get to eat it!
